3 Bean Soup

It's cold outside, and that means Soup time. Even though I don't currently have a kitchen to cook in, I definitely wanted to share one of my favorite and extremely easy recipes.





Ingredients:

1 cup of Black Beans (canned)

1 cup of Dark Kidney Beans (canned)

1 cup of Lentils

1 Red onion chopped

1 cup of Celery chopped

2 Fresh Garlic cloves

1 large Bell Pepper chopped 2 cups of baby potatoes

8 cups of water

1 tbsp cumin

1 tbsp pepper

1 tbsp garlic powder

1 tsp of ginger powder

1 cup of veggie broth

2 cups of brown rice

1 cup of Fresh Chopped Kale

1 tsp of turmeric

1 tbsp of Olive Oil



In your soup pot, combine Olive oil, onions, bell peppers, celery, and garlic until tender. Then add water and Lentils and potatoes and let those cook about 20 minutes. After the Lentils are nice and tender but not fully cooked add all the other beans (rinse they extremely well) and cover the pot for about 5 more minutes. Once the beans are cooked all of the seasoning and cook for another 10 minutes at a very low temp. Cook the rice on the side for the folks that don’t want rice in there soup.


In another small frying pan add olive oil and Kale with some pepper and turmeric until very tender. You will use this to top the soup.





Pour in your favorite bowl and enjoy!
